About the Cheese
A robust cow’s milk blue cheese, reminiscent of the famous Roquefort in its strength and creaminess.
Blue des Causses is crafted in the heart of the rugged limestone region known as Les Causses. The cheese draws its distinctive flavour and character from the limestone caves where it matures for 3-6 months, developing deep pockets of greenish-blue mould and a bold, spicy profile.
The exceptionally smooth and luscious texture of this cheese is attributed to the milk sourced from Laguiole cows.
It pairs exquisitely with sweet white wines such as Sauternes or late harvest Gewürztraminer, making it an ideal choice for a memorable dessert.
This cheese is featured in our French Selection.
Cheesemaker: The Laqueuille cheese dairy
The Laqueuille cheese dairy, established in 1949 by Mr. Antoine Sarliève in Laqueuille-Gare, produces the renowned Bleu d’Auvergne “La Mémée.”
Nestled at the foot of the Sancy massif in the Puy de Dôme, within the Auvergne Volcanoes Regional Park, the dairy benefits from the rich, varied pastures of this traditional cattle-raising region.
The cows, fed on grass and mountain hay, provide high-quality milk essential for crafting exceptional cheese. Laqueuille follows strict PDO guidelines, ensuring each cheese is produced with meticulous care from milk collection to aging.
Over the years, the dairy has modernised its facilities to meet stringent health standards while maintaining traditional cheesemaking techniques.
