A favourite everyday tea from China. The fine large leaves, prepared in a Sencha style, produce a mild, toasty sweet taste and a delicate green-yellow infusion.
We find this an accessible, reviving and refreshing and particularly suited to those new to green tea, but well appreciated by connoisseurs too.
The Sencha production method is typical to Japanese green tea and has been adapted for some China green teas. Freshly picked leaves are withered and then pan fired to prevent oxidization. The resulting tea is bright, yields a green/yellow cup and has a vegetal and grassy flavour. Some Sencha teas develop savoury seaweed-like notes.
