About the cheese
Pecorino Sardo is one of Italy’s most ancient and celebrated ewe’s milk cheeses, with origins thought to trace back to the Bronze Age. A true staple of Sardinian culinary tradition, it has been made for generations by local shepherds using time-honoured methods.
Firm and slightly crumbly, it offers a beautifully layered flavour – gently sweet at first, then developing a piquant edge with a lingering, savoury finish. Rich yet refined, it is a cheese that evolves on the palate.
Enjoy it simply in shards, with a full-bodied Italian red, or grated over pasta and hearty dishes for added depth and character.
About the producer
Crafted by CAO Formaggi, a cooperative of over 700 Sardinian sheep farmers founded in 1966 to preserve and elevate the island’s cheesemaking heritage.
By bringing together local producers, the cooperative transforms exceptional quality milk into distinctive cheeses that reflect the land and its traditions. Every stage, from farm to finished cheese, is carefully monitored to ensure consistency, traceability and excellence.
Driven by passion and respect for their craft, CAO Formaggi continues to share the authentic flavours and culture of Sardinia with the world.
