About the Cheese
An extra-mature Swiss cheese with remarkable depth and character.
Made with raw cow’s milk in the Emmental region, Cironé is matured for at least two years, developing a firm, compact texture scattered with crunchy protein crystals.
Part of its long maturation is especially unusual: tiny cheese mites are deliberately allowed to work on the rind, helping the cheese mature slowly and develop its distinctive character.
The flavour is wonderfully complex, with sweet, nutty and caramel notes, alongside a savoury depth that lingers beautifully on the palate.
Take your time with this one. It is a cheese made for slow, appreciative eating.
Cheesemaker: Jumi Cheese
Jumi Cheese has a rich heritage in cheese production, beginning with their great-great-grandfather in 1896.
Over five generations, the family has honed their craft, becoming exceptional cheese artisans dedicated to improving and enriching the range of Swiss cheeses. Every step of their process, from milking the cows to delivering the final product, remains non-industrial, ensuring the highest quality.
In the valley of Emmental, cows graze in lush pastures, and their fresh milk is brought to the dairy twice daily. Cheese making begins with the milk still warm from the cow, and each cheese is carefully nurtured by the artisan until it is ready to be enjoyed by both the artisan’s family and cheese lovers.
