About the Cheese
Stilton from Colston Bassett is renowned as one of the finest Stiltons available.
Handcrafted by Billy Kevan and his skilled team in Nottinghamshire, Colston Bassett Stilton remains one of the last Stiltons to be hand-ladled.
Named after the town of Stilton, a historic staging post where The Bell Inn first served this exceptional cheese, its fame quickly spread beyond the small town.
Colston Bassett Stilton offers a perfect blend of rich, moist paste, minerality, balanced salt, and sweetness.
It pairs beautifully with port and other red grape-based dessert wines.
Cheesemaker: Colston Bassett
Established as a cooperative in 1913, Colston Bassett Dairy is still owned by a select group of local residents and the farmers who supply the milk.
It is one of only five dairies worldwide still producing Stilton. Unique in its traditional methods, the dairy continues to hand-ladle the curds from the vat to the cooling trays, a crucial step in creating a smooth, rich-textured cheese.
The milk is sourced from farms within 1½ miles of the dairy, and Billy Kevan is only the fourth head cheesemaker in over a century.
