About the Cheese
Morbier AOP is a unique and distinguished cheese made from raw cow’s milk, featuring a signature line of vegetable ash at its center. This hallmark adds to the smoothness of its ivory-coloured paste.
The history of Morbier is ancient, originating from the farms of the Comtois region, where it was traditionally produced in halves using morning and evening milk.
The first layer was protected by ash, which has now become a decorative feature. This washed rind cheese from the Jura region is full of character, offering a balanced pungency and nutty finish.
During maturation, the rind is washed with special brine, contributing to its bright orange colour and somewhat pungent aroma.
Whether enjoyed young or aged, this Morbier has a true personality and recently won a Gold Medal in Paris in 2023.
