In the 16th century, Dutch traders used green Java beans as ships’ ballast and discovered that months of ocean air, salt and wooden holds transformed them completely, mellowing the acidity and deepening the flavour into something Europe couldn’t get enough of.

Today, that transformation is recreated on land, with the beans aged underground in wooden barrels for a remarkable five years.
