About the Cheese
An off-the-beaten-path artisan goat’s milk cheese from Spain, Payoyo is crafted from pasteurised milk of the rare Payoya goat, native to the mountain pastures of the Sierra de Grazalema.
This cheese boasts a semi-firm, dense paste that is smooth on the palate. Its aroma is reminiscent of fresh flowers, while the flavour reveals delightful hints of white chocolate and sage.
A true crowd-pleaser, Payoyo might pleasantly surprise those who aren’t typically fond of goat’s milk cheeses.
Enjoy Payoyo with medium-bodied white or light red wines.
